Croquetas de puchero
A whole puchero won't fit in a tapa. That's why these exist.
Mairena del Aljarafe · Sevilla
A bar in Mairena del Aljarafe where the tapas are serious and the decor is anything but.
There's a moped hanging on the wall, coloured chairs on the ceiling and dogs in sunglasses watching you eat. We're a bit mad in the head, yes. With the food, never: frying done right, stews that take their time and produce we respect. That's why we're Mad about food.
Oil at exactly the right heat, stews that take their time and meat off the grill. Almost everything comes as a tapa or a ración, so you can try a bit of everything without stopping short.

A whole puchero won't fit in a tapa. That's why these exist.
Starters
A bar gets judged on its ensaladilla alone. Fair enough: ours comes out properly cold.
Meat
Cooked until the clock gives up. The knife is purely decorative.
Recommended
Solomillo, goat's cheese and sweet onion arguing on a slice of bread. You win.
Meat
At the butcher's, the odd names hide the best cuts. Pork off the grill.
Fried
The one dish where manners get in the way. Golden, sticky and strictly hands only.
Herringbone red brick, globe lamps, a living wall and a few dogs in sunglasses keeping an eye on the room. A bar for quick tapas and tables for settling in. A proper neighbourhood place: walk in without booking and stay until they close.
